 White Bean Ragout

Serves:6 People


Ingredients

Cannellini beans, soaked and cooked 1|4 kg

Extra virgin olive oil        1|4 cup

Yellow onions, chopped      1.1|2 cups

Garlic cloves, minced   3 large 

Cherry tomatoes, or grapes, halved   4cups

Chicken broth, or vegetable broth  1.1|2cup

Tomato paste                      1.1|2tsp

Balsamic vinegar                  1.1|2tsp

Salt and pepper

Fresh basil, chopped          2tbsp

Fresh mint, chopped      2tbsp


Method.


1- In a large pan over medium heat, heat olive oil and cook the onions for approximately 8 minutes, stirring frequently until they become soft and translucent without browning, then add the garlic and cook for an additional minute.


2- Introduce the tomatoes, beans, chicken broth, tomato paste, and balsamic vinegar to the pan, ensuring to season with salt and pepper according to your taste preference; allow the mixture to simmer for 3 to 5 minutes until the tomatoes slightly soften while retaining their shape, then taste and adjust the seasoning accordingly.


3- Incorporate the fresh basil and mint into the mixture, then transfer the flavorful ragout to a serving dish, adding an optional garnish of more fresh herbs to enhance its visual appeal.


4-Serve and enjoy!
